A node of honkarebushi, drawn thin one sheet at a time on the shop-front shaver. Bonito flakes that have only just met the air are another thing entirely in aroma and sweetness. For over a century in the Tsukiji outer market, we have repeated the same work.
Good cooking begins with the dashi.

Shaved flakes lose their fragrance from the moment the blade lifts. So at Akiyama Shōten we shave the day’s portion the same day. The ito-kezuri, drawn fine as thread, is the work of our own hands.
