Do you shave the flakes in the shop? Yes. We shave the day's flakes on the counter every day. Freshly shaved, the aroma and sweetness are another thing entirely.
What is ito-kezuri (thread-cut)? Flakes drawn as fine as thread — our house handwork. Used as a fragrant, decorative finish on a dish.
